🍫 Double Chocolate Fudge Brownie

Ingredients:

  • 120g All Purpose Flour

  • 50g Cocoa Powder

  • 200g Brown Sugar

  • 200g White Sugar

  • 28g Coconut Oil

  • 2 Eggs

  • 1 tsp Vanilla Essence

  • 1 pinch of Salt

  • 1 Tbsp Hot Water

  • 125g White Chocolate

  • 125g Milk Chocolate

  • 125g Fudge Pieces

Instructions:

    1. Preheat your oven to 180°C (356°F). Line a 20cm x 20cm baking tin with greaseproof paper.

    2. In a saucepan on low heat, melt together the butter, coconut oil, and cocoa powder until fully combined.

    3. Stir in the brown sugar, white sugar, and vanilla essence until mixed.

    4. Whisk in the eggs until the sugar has mostly dissolved.

    5. Add hot water and stir to combine.

    6. Sift in the flour and salt. Gently fold through until just combined (do not overmix).

    7. Fold in the white chocolate, milk chocolate, and fudge pieces until evenly spread through the batter.

    8. Pour the batter into the prepared tin, scraping down the sides of the bowl.

    9. Spread the batter evenly into the corners of the tin.

    10. Bake on the middle rack for around 20 minutes, until:

      • The edges start pulling away from the pan.

      • The center no longer wobbles when shaken.

    11. Leave the brownie in the pan to cool completely.

    12. Top with melted chocolate, extra fudge pieces, and pistachios if desired.

    13. Once fully cooled, cut into squares and enjoy! 🍫✨
